Winter Napolean
1 butter nut squash, sliced
1 onion, diced
4 small apples, sliced
1 clove garlic, chopped
½ cup prunes, chopped or other dried fruit
1 cup dried cranberries, or other dried fruit
½ cup water or other liquid ( fruit juice works well)
½ cup vinegar of choice
1 cup chopped walnuts
1 ½ cup oats
3 Tbls. butter or oil
½ c brown sugar
1 Tbls. ground cinnamon
1 tsp ground cloves
1 tsp. ground nutmeg
1 tsp. ground pepper
1 Tbls. Salt
Directions: In a small bowl mix the salt, pepper, cinnamon, clove, and nutmeg and mix thoroughly. In a medium sauce pot, cook onions in 1 Tbls. butter or oil till tender, add garlic and cook till fragrant. Add The dried fruit and liquid and vinegar, bring to a light boil. Season with a little of the spice mixture and ¼ cup of the brown sugar. Mix well and set aside. In a bowl mix oatmeal, walnuts, rest of the brown sugar, rest of the butter (melted), and some of the spice mixture, set aside. In a greased cake pan, layer the sliced butter nut squash and apples, seasoning with spice mixture as you go. Top this with the dried fruit mixture, cover with foil and bake for about 20 min at 350 degrees. Remove from the oven and add the oatmeal mixture and return to oven for about 15 mor min. till golden brown on top.
