Spaghetti with Bacon and Pumpkin “Pesto” Sauce

·        1# spaghetti, cooked and cooled save about 2 cups of the pasta water

·        5 slices bacon, chopped

·        1 onion, diced

·        1 can pumpkin

·        6 clove fresh garlic

·        ½ cup olive oil

·        2 Tbl. dried basil

·        1 Tbl. dried thyme

·        1 lemon, zested and juiced

·        ½ cup parmesan

Directions: In a small pan combine whole garlic cloves and oil, heat over medium heat till garlic is golden brown and soft. Allow it to cool and put into a blender. Add pumpkin, dried herbs, lemon juice and zest, and parmesan. Pulse till smooth, you may have to add water to help move things along, adjust seasoning with salt and pepper. Set aside. In a large pot cook bacon until crispy then add the onion, cook till onion softens. Add pasta and pesto sauce and stir to combine. Keep stirring till pasta is heated through, serve with more shaved parmesan if desired.
