Vegetarian Meatballs with Cherry and Date Chutney

1 can garbanzo beans, drained

1 can pinto beans, drained

1 cup plain oatmeal

1 sweet potato diced fine

¼ cup finely diced celery

Directions: In a large bowl combine the beans and vigorously mash either with a potato masher or your hands. Add oatmeal, celery, and sweet potato and mix to combine. Form into balls or patties and sear in electric skillet or pan on stovetop till thoroughly heated.

 

2 cup cherry/apple juice

1c dried cherries

1c dried dates

2 oranges, zested and juiced

1 tsp red pepper flake

Directions: In a small sauce pot, reduce the juice down by half. Add in the rest of the ingredients and allow to cook. If it seems to thick for your liking add more juice. Adjust seasoning with salt and pepper.
