Grilled Beet and Pear Salsa

3 medium beets, peeled and sliced

 3 pears, sliced

3 limes, zested and juiced

2 bell peppers, diced

1 Tbls. Chopped fresh basil

1 pt. cherry tomatoes, halved

2 Tbls. Olive oil

Directions: Preheat grill. Separately toss beet slices and pear slices in a little oil, salt, and pepper. Place on grill and cook just until marks are created. Allow to cool, then dice. Toss all ingredients together and allow to set for about a half hour. Serving suggestions: spoon over lamb chops, pork chops, chicken breasts, on your favorite taco, over quinoa or other grain.
